By setting the default POS product category when creating a new product template.

How do you establish a parent-child relationship between POS product categories?
Open the child POS category form and fill in the “Parent Category” field.

Odoo POS does not support hierarchical product categories; a POS category cannot be a subcategory of another.

What’s the “Available between” field used for?
